
Avec « Strasbourg mon Amour » et la commerciale Saint-Valentin, les boutiques de chocolats ne devraient pas désemplir dans la capitale régionale. Au cœur du Strasbourg touristique, j’ai découvert une nouvelle enseigne pleine de douceurs, Le Lautrec.
C’est une petite boutique située à deux pas de la cathédrale, juste en face de la célèbre maison Kammerzell. Un emplacement enviable, ce 13, place de la cathédrale, avec son flux ininterrompu de visiteurs. Mais discutable aussi, les nids à touristes n’étant pas les moins chers. Pourtant, ici on annonce du haut de gamme accessible.

chocolats belges de Leonidas succèdent ceux d’un artisan français
qui s’est fait un nom en Auvergne, Claude Déat. Avec son épouse
Elizabeth, l’entrepreneur de Chamalières est aujourd’hui à la tête
d’une huitaine de points de vente dont Strasbourg le dernier, le
premier aussi hors de la région Auvergne – Rhône – Alpes. Que vient
chercher le chocolatier puydômois dans la capitale du Grand Est ?
Une opportunité. Mais surtout un point de chute proche d’un
partenaire. En Alsace, Claude Déat fait équipe avec le
Mulhousien Pascal Brunstein (maison Caprices), MOF et champion du
monde de chocolat 1993. Le consultant international est un expert du
décor. Et c’est sa belle-fille Pauline qui tient la boutique
strasbourgeoise. Son fils s’étant occupé du design du commerce,
plein de rondeurs. La couleur orange mariée aux teintes du bois
ouvre l’appétit pour ces trésors gustatifs.
Le Lautrec Strasbourg est spécialisé dans les chocolats et les macarons. La marque de fabrique de l’enseigne est le grand cru. Qu’ils soient de plantation ou de terroir, les 10 grands crus se déclinent en pistoles et en tablettes. Le fabricant auvergnat se revendique « 1er chocolatier 100% Origines », de la ganache à l’enrobage. Palets, dômes et pralinés véhiculent les saveurs d’Amérique, d’Afrique et d’Océanie. La ganache de Sao Tomé que me sert Pauline envoie des notes iodées et intenses. Celle du Mexique sera suave et cacaotée. Pour les plus gourmands, Perle d’Asie par exemple, qui marie praliné et confit de yuzu…
Pour la fête des amoureux, Claude Déat propose entre autres le coffret de macarons. J’ai préféré succomber au Philtre d’Amour, moulé à la main au chocolat mexicain.
De quoi « tomber irrémédiablement amoureux » de mon épouse avec qui je vais le partager. Le chocolat, un grand voyage.
